I am removing the stock ac unit from my 1960 hard top. Do the air vents in the dash only do AC or does it do both heat and AC? Also, should I just leave the large AC compartment on the firewall or can I remove that? If I do remove it I believe there is a hole in the firewall I would need to cover up.

The big vent in the center of the dash is for AC only.
If you remove the AC unit attached to the firewall, then you will need to fabricate some sort of plate to block off the rectangular hole in your firewall.
If you remove it, you will probably need to get a different blower housing and also a different heater control unit (the one on your center console).
