I would go with the rubber simply so they could be re-used in the
event you have to take things apart.
I would use sealer on both the cover (thin amount, to seal and
to hold it to the cover) AND the cylinder head. The surface should be bone-dry and cleaned with lacquer thinner.
Once assembled, let it cure for 24 hours, do not run the motor.
For the next couple of weeks, check every so often for leaks and
be willing to humbly admit you might have to deal with one. if so,
locate the area, clean and re-assemble. For some reason it takes
me a couple tries to get it leak free - there is always some little section that did not bond.
The fact you have sheet metal covers and not cast makes all this
harder as they flex.
