Everyone who owns a Squarebird should invest in the VTCI Official Factory Specifications for the Squarebird. It answers many of the questions like this. If you are a VTCI member, you can get it in manual or CD form. I own the CD. According to the OFS, the headliner for a '58 is W or White, regardless of what color your interior is.

The VTCI rules do say white, but it is not a bright white. More like a bone color off white, maybe a cream color once set against a bright white piece.
Most of the vendors sell a matching color to the original.
