how hard is it to add A/C if you get everything from a donor car? on a 1960 bird

I'd like to know that also... I would think it would be no big deal.. there are no different body / dashboard parts. (few brackets here and there.. I would like to do the same with my '58 if ever came across a "donor" car.

I found a donor car, a 60 that was on ebay a few weeks ago, there parting it out now, waiting on a price for everything to do with the A/C.

One thing I would strongly urge you to think about is your cooling system. You will be placing much more demand on it, and it was somewhat marginal to begin with.
Two mods would improve it alot and are what Ford did in 1960 (or contemplated):
a) a 6 blade fan instead of 4 (I did this - its easy and works effectively; also cheap)
b) a shroud. See various posts on how people approached this, from aftermarket (repro) to modified ones from Galaxies)
Basically, your cooling system can never be too good!

Already have a electric fan setup for the bird that I'll install once it's up and running good.
